Lotus Thai is the Sustainability Coordinator for UCI Dining, a partnership between UC Irvine and Aramark. In this role, she works with over 28 dining locations including catering, two zero waste dining halls, and retail locations. She develops educational programs and innovative projects that focus on zero waste (recycling and composting), plant-based foods, and sustainable purchases. In just 8 months, Lotus collaborated with location managers to implement all of the Fair Trade University designation requirements. In May 2018, UC Irvine was officially designated as the 51st Fair Trade University!
Lotus graduated from Chapman University with a Bachelor’s of Science in Environmental Science & Policy and Business Administration. She is also a Master’s of Business Administration candidate at UC Irvine.
